The wonderful Anna Gare has been a champion of our cold smoked tomatoes for a while now and we love, love, love, her latest creation; a salad using both fresh and cold smoked tomatoes.
There are no actual quantities for this: the joy of this salad is that you can add and subtract ingredients to suit; a little bit more of this, a touch less of that to suit yourself. The only thing you can’t do without is our cold smoked tomatoes!
The following is our version of Anna’s original salad:
Baby spinach leaves
Bee Lane Original Cold Smoked Tomatoes, drained and cut into pieces
(save the flavoured oil)
Toasted pepitas (pumpkin seeds)
Micro herbs (optional)
Soft feta, broken into small chunks
Extra Virgin Olive Oil
Freshly ground black pepper
- Assemble all the ingredients on a board or platter.
- Drizzle with extra virgin olive oil and a squeeze of lemon juice, and grind over some black pepper.
- Don’t forget that the more you chop up our cold smoked tomatoes the more smoke and flavour you will release.
- Use the drained flavoured oil from the cold smoked tomatoes in place of extra virgin olive oil
