The wonderful Anna Gare has been a champion of our cold smoked tomatoes for a while now and we love, love, love, her latest creation; a salad using both fresh and cold smoked tomatoes.
There are no actual quantities for this: the joy of this salad is that you can add and subtract ingredients to suit; a little bit more of this, a touch less of that to suit yourself. The only thing you can’t do without is our cold smoked tomatoes!
The following is our version of Anna’s original salad:
Baby spinach leaves
Bee Lane Original Cold Smoked Tomatoes, cut into pieces (use kitchen scissors, it's less messy!)
Toasted pepitas (pumpkin seeds)
Micro herbs (optional)
Soft feta or goat cheese broken into small chunks. Anna uses Labneh which is strained yoghurt and is equally as yummy
Extra Virgin Olive Oil
Freshly ground black pepper and salt to taste
- Assemble all the ingredients on a board or platter.
- Drizzle with extra virgin olive oil, a squeeze of lemon juice and season with ground black pepper and salt
- Don’t forget that the more you chop up our cold smoked tomatoes the more smoke and flavour you will release.
